May Kaidee opened her first operation in Bangkok in 1988 on a gas-powered wok on two wheels in an alley near Khao San Road. That original street cart grew into six restaurants spread across Thailand, Cambodia and the United States before a significant downsizing in 2020. The current address at 54, 1 Soi Samsen 5 in Phra Nakhon is the eighth Bangkok incarnation, sited on the same block as where the cart first ran. The full menu is 100 percent plant-based and draws from regional Thai traditions including Isaan cooking from Northeast Thailand. Signature plates include Pad Thai, Panang Curry, Red Curry, Tom Yam Soup, Papaya Salad, Glass Noodle Salad and Fried Rice with Pineapple, all produced without animal products and available daily from 9AM.

The school runs two sessions daily. Morning runs 9AM to 1PM and covers six dishes: Peanut Sauce, Tom Yum Soup, Tom Kha Soup, Pad Thai, Massaman Curry and a curry of your choice. The morning session includes a course notes booklet, fresh fruit and spring water. Afternoon class runs 2PM to 6PM with a custom recipe option that includes fresh spring rolls and papaya salad. Drinks ordered outside the included water cost extra.
