Skip the North Indian half of the menu the first time you visit. The reason this kitchen has carried a nineteen-year run across four cities is the South Indian board: the dosa griddle, the Chettinad chicken, the sambar that arrives still steaming. Order from the Dosa & More section, add one Chettinad plate to share, and let the rest of the menu wait for visit two.

You walk in off Ratchaprarop Road, just below the Baiyoke Sky tower in Pratunam, and the air shifts immediately to curry leaf, mustard seed, and the sizzle of a dosa hitting iron.

Madras Darbar has been cooking South Indian food in Thailand since 2007, and the Bangkok room is part of a four-city footprint that now runs from Pattaya through Phuket and out to Colombo. The menu carries both halves of the subcontinent, with categories the kitchen has kept consistent across all four cities: Dosa & More, Paneer & Veg Curries, Fish & Prawn Specials, Biryani & Fried Rice, Grilled Tandooris. The South Indian section is what the menu page leads with. The butter masala dosa comes out crisp at the edges with a spiced potato fill, served alongside sambar and a small flight of chutneys. Chettinad chicken is listed as a signature on the venue's own menu page.

The kitchen runs late. The Bangkok branch keeps a 9:30 AM to 12:30 AM operating window. Delivery and takeaway are both on the board if you want to eat in your hotel room instead. The Ratchaprarop airport-link station is within walking distance, which is the simplest way in.

Bring at least one other person so you can split a dosa and a Chettinad plate without choosing between them, and let the South Indian section drive the order.
