You walk into a hotel dining room where the sushi counter sits front and center. Chefs work in view, slicing and plating with the kind of precision that reads as performance rather than routine. This is Japanese haute fusion shaped by Michelin Star-trained chef Alvin Chew, who blends local and global ingredients into a menu that runs à la carte, Teishoku set lunches, and a six-course tasting sequence called Itadakimasu.

The Beef Cheek and Foie Gras Donabe anchors the menu. Beef cheek braises in red wine, soy, and spices for 36 hours until it collapses under a fork, then gets paired with foie gras and set over truffled Koshihikari rice in a traditional clay pot.
