Zwiener spent over forty years as head waiter at Peter Luger in Brooklyn before opening his own steakhouses starting in 2004. The Bangkok location carries the same approach that defines the New York originals. The kitchen applies a dry-aging programme of at least twenty-eight days for prime porterhouse and ribeye cuts. Beef hangs in controlled temperature environments to concentrate flavour and break down connective tissue. The porterhouse arrives for two or more diners, seared in a broiler running above 800 degrees. It finishes on a preheated platter that holds temperature through the meal.
