Wolfgang's Bangkok is a serious steakhouse that delivers on the dry-aged beef promise. The porterhouse for two is the correct order. It arrives with a deep crust and pink interior from edge to edge, the dry-aged fat carrying a nuttiness that refrigerated beef simply cannot produce. Lumphini MRT or Sala Daeng BTS get you close, or take a Grab to the One Bangkok basement. Book a table well ahead for any weekend dinner.

Wolfgang's Steakhouse Bangkok occupies the third floor of One Bangkok in Lumphini. The kitchen serves USDA Prime dry-aged beef from the New York brand founded by Wolfgang Zwiener. Zwiener spent over forty years as head waiter at Peter Luger in Brooklyn before opening his own steakhouses starting in 2004. The Bangkok location carries the same approach that defines the New York originals. The kitchen applies a dry-aging programme of at least twenty-eight days for prime porterhouse and ribeye cuts. Beef hangs in controlled temperature environments to concentrate flavour and break down connective tissue. The porterhouse arrives for two or more diners, seared in a broiler running above 800 degrees. It finishes on a preheated platter that holds temperature through the meal. The crust is deep brown and crackling, with the interior pink from edge to edge at medium-rare. The dry-aged fat carries a nuttiness that separates this category from conventionally refrigerated beef. Sides include crispy hash brown potatoes and creamed spinach that has appeared on every Wolfgang's menu since the first location opened. One Bangkok is a relatively new development in Lumphini, placing the restaurant inside a complex of luxury retail and corporate offices. The overall setting is formal without being stiff.
