BARTELS Sathorn occupies a two-floor space at 167/4-6 Soi Sathon 3 in the Suan Phlu neighbourhood of Sathorn, positioned across from the well-known cocktail bar Smalls. The Sathorn branch is the second Bangkok location for the brand, which also operates in Sukhumvit, Thonglor, Asok, True Digital Park, and multiple Phuket outposts, as well as Ho Chi Minh City.

The business was founded by Nicolai Bartels Thomsen, a Danish entrepreneur with experience in food and beverage across Asia and Europe. The brand identity is rooted in Scandinavian design and a rigorous approach to bread: no commercial yeast, no hybrid methods, and no shortcuts. Every loaf goes through 24 to 48 hours of natural fermentation, is shaped by hand daily, and is baked in open in-shop bakeries throughout operating hours. The guarantee the brand makes is that any bread you buy is no more than three hours out of the oven.

The menu centres on sourdough sandwiches, both grilled and open-faced, with savoury and sweet options. The Grilled Cubano, priced at 250 THB, is stacked with smoked ham, pickled cucumber, cheddar, parmesan, mayo, and mustard, served hot off the grill. The kitchen also produces smoked salmon bruschetta, Turkish eggs, and Greek yogurt bowls with fresh fruit. Vegan options are available. Cold-pressed juices are made to order rather than pre-bottled. Coffee is sourced from PAGA, a micro roastery.
