IPPUDO runs a precision operation and the consistency is the product. The Shiromaru Classic is the honest starting point: pork bone simmered over 18 hours, ultra-thin noodles, clean finish. Our view is that the Akamaru Modern is the more interesting bowl, the spicy minced pork miso disrupting the broth in a way that rewards returning visitors more than it rewards first-timers who simply want a benchmark.

The original IPPUDO opened in 1985 in Fukuoka's Daimyo district. Shigemi Kawahara named it with a phrase meaning roughly "one wind hall," tied to his stated ambition to blow wind and revolutionise the era for Kyushu ramen. The brand remained Japan-only for over two decades before opening its first overseas location in New York City in 2008. Singapore followed in 2009. From there the chain expanded across Asia and into Europe, reaching more than 240 locations globally.
