Potong is a Michelin starred restaurant in Bangkok's Chinatown led by chef Pichaya Soontornyanakij, known as Chef Pam. It occupies her family's 120 year old Sino-Portuguese building on Yaowarat, once a herbal medicine shop. The kitchen serves a progressive Thai-Chinese tasting menu of around 20 courses priced near 5,500 THB per person. Pam trained at the Culinary Institute of America and worked at Jean Georges in New York. Booking well ahead is essential.
